  • 5 firm but ripe plums, preferably Victoria plums
  • homemade rough puff pastry
  • mulled plum sorbet
  • 3 digestive biscuits
  • 500 g plums
  • 60 g sugar
  • ½ cinnamon stick
  • juice of one lemon
  • 1 free range egg white
