3 slices thick-cut bacon, chopped

1 1/2 pounds mixed mushrooms (cremini, oyster, shitake, portobello, etc.), chopped coarsely or sliced

2 teaspoons minced fresh thyme

-- Kosher salt and ground black pepper, to taste

1/2 cup sherry

3 tablespoons butter

1 onion, diced (about 2 cups)

1 large leek, sliced into half moons (about 1 1/2 cups)

1 1/2 pounds potatoes, peeled and diced

2 1/2 cups half-and-half

1/4 cup minced chives

1/2 pound Dungeness crab meat, picked over
