3 large cloves of garlic, whole, skin removed

1 large yellow onion, sliced

1 cup roasted chestnuts (about 20-23)

2 bay leaves

1 TBSP freshly chopped thyme

4-6 cups vegetable stock

olive oil

salt and pepper

thyme and pomegranate seeds for garnish
