1 tsp. active dry yeast

2 cups rice flour

1/4 cup farina (such as Cream of Wheat)

1 cup finely grated fresh coconut or finely

shredded dried unsweetened coconut

5 1/2 tsp. sugar

2/3 cup fresh "first milk" coconut milk

or 2/3 cup canned unsweetened

coconut milk (see Coaxing the Coconut )

1/2 tsp. salt
