50 g icing sugar

pinch of salt

2 egg yolks

The scraped out seeds of 1 vanilla pod

125 g butter

125 g caster sugar

1 vanilla pod, seeds scraped out

125 g ground almonds

25 g rice flour

A pinch of salt

1 tsp. baking powder

2 eggs, beaten

Finely grated zest of 2 oranges, plus the juice of 1

100 g pine nuts, lightly toasted in a dry pan

A little icing sugar for dusting, optional
