1/4 cup fresh mint , chopped

1/2 cup chopped fennel leaves , plus tender stalks (or fresh dill or a combination)

1/2-4 lb leg of lamb , butterflied

1/3 cup olive oil , plus more for brushing

1 teaspoon fennel seed , freshly ground (or crushed in a mortar)

1/2 cup crumbled feta cheese
