Haven't made this yet, but my best guess would be to marinate the steak overnight in the bourbon and just prior to grilling (or broiling - but I'd recommend doing this on a flaming hot grill), rub the brown sugar, salt and red pepper flakes into the meat so that it creates a crispy grilled crust. Anyone?

1/4 cup light brown sugar

1/4 cup bourbon

1/2 teaspoon red pepper flakes
