Linguini Garlic Clam Sauce

Ingredients for 4 servings

1 lb linguini

10 cloves minced garlic

1/2 cup olive oil

8 6.5 oz cans minced clams

1 cup pinot grigio

1 cup clam broth

1 cup fresh chopped parsley

1 tsp basil

1 tsp oregano

1 tsp black pepper

freshly grated parmesan cheese

1/4 small  onion finley minced

sprinkle of cayenne if desired

Preparation

1.

cook linguini

2.

meanwhile in a large frypan add the oil and sauté the onion

3.

add the garlic and continue sautéing

4.

add clams (drained) and simmer for 5-6 mins

5.

add remaining ingredients (except the cheese and parsley)

6.

cover and simmer for 10 mins adding the fresh parsley a couple of minutes before completion

7.

toss the sauce with the drained linguini and Parmesan

8.

serve hot, garnish with fresh parsley
