Ingredients for 8 servings

10.5 oz. (300 gr) all purpose flower

1 large high-quality organic egg

2.2 lb. (1 Kg) old "starchy" potatoes

1 tsp of salt

5 Tbsp of butter

Salt and Pepper

2 handfuls of sage

Grated Parmesan for Dressing

1 cup of mushrooms (portobello or porcini)

1 shallot or 1/2 yellow onion

1 handful of fresh thyme

2 tbs of butter

5 tbs of Olive Oil

12 oz. of pelati (peeled tomatoes)

1 handful of fresh mint

1 handful of fresh parsley

1/4 cup of heavy cream
