2 pounds sirloin steak, sirloin tip or flap meat (see Note)

1 cup beef or chicken broth

4 teaspoons Worcestershire sauce

2 teaspoons A1 steak sauce

2 teaspoons kosher salt + more to taste

4 tablespoons olive oil

1 teaspoon minced garlic

1 large yellow onion, cut in half then thinly sliced lengthwise

1 red bell pepper, thinly sliced lengthwise

1 green or yellow bell pepper, thinly sliced lengthwise

1 teaspoon minced thyme

-- Freshly ground black pepper

3 hoagie-type rolls split in half

-- Dijon mustard

3 ounces grated Gruyere or Gouda cheese (young, not aged)

3 ounces grated Monterey Jack
