Ingredients

2 tbsp clarified butter/ghee

2 branches fresh rosemary

1 large leek, white and light-green parts only, sliced thin

1 head garlic, peeled and chopped coarse

4 large shallots, peeled and sliced thin

4 medium yellow onions, peeled and sliced thin

1 quart roasted chicken stock

1 tbsp white wine vinegar

unrefined sea salt, as needed

ground white pepper, as needed

3 tbsp clarified butter/ghee, for frizzled leeks dressing the bisque
