4 shallots, peeled

10 g dried shrimp paste (belacan), toasted

4 dried red chillies, soaked in hot water

20 g red chillies, sliced

4 red chillies

500 g galangal (lengkuas) shoots, cut into 5cm lengths at a slant

1 tsp sugar

1 onion, halved and sliced

2-3 tbsp cooking oil

2 tsp light soy sauce

2 cloves garlic, peeled

3 tbsp sambal belacan

10 g ginger, shredded finely

1/8 tsp salt or to taste
