Ingredients for 4 servings

2 tablespoons olive oil

2-3 links pork sausages, removed from skins (try to use sausage with extra flavor)

1 large onion, finely chopped

2 garlic cloves, chopped

2 celery stalks, diced

1 carrot, peeled and diced

3 tablespoons tomato paste

4 cups chicken or vegetable stock

1 (15-ounce) can navy or cannellini beans, rinsed and drained

Salt and freshly ground black pepper

green cabbage such as kale or savoy, cut into large strips

tomatoes that have seen better days, chopped

zucchini, chopped

crusty bread

Parmesan cheese, grated
