Ingredients for 6 servings

1 lb shrimp, 25 count, cleaned, shelled & deveined

3 Tbsp olive oil, divided

juice of ½ lemon, or to taste

2 Tbsp and 2 tsp garlic, minced and divided

salt and pepper, to taste

2 Tbsp butter

2 Tbsp flour

½ cup parmesan cheese, grated

1 onion, diced

½ cup zucchini, diced

½ cup asparagus, diced

½ cup carrots, diced

½ cup broccoli or cauliflower, diced

2 large tomatoes, diced

2 Tbsp fresh parsley, minced

1 Tbsp fresh thyme, minced

1 Tbsp fresh basil, minced

8 oz pasta of choice, cooked al dente according to package

shrimppasta water, from preparing the pasta, as needed
