Monica boiled noodles ~1/2 way then through into hot chili oil to seer them to give them flavor and keep them from getting soggy

This time i added 1 tbs of oyster sauce in place of fish sauce

Added chopped fresh serano chili and used brown sugar over white and did not use the fish sauce. Noodles were soggy and not orange. Next time we will try to stir noodles in a chili oil.

Ingredients

7 ounces narrow dried rice noodles (see Note)

1/4 cup rice vinegar

2 1/2 tablespoons fish sauce

3 tablespoons sugar

1 teaspoon paprika

1/4 teaspoon cayenne pepper

3 tablespoons chopped roasted peanuts

1 1/2 tablespoons vegetable oil

1 tablespoon chopped garlic

6 ounces shelled, deveined and butterflied medium shrimp

1 1/2 cups firm tofu cut into 1/2-inch dice

1 egg, lightly beaten

2 green onions, halved lengthwise and cut into 1-inch lengths

2 cups bean sprouts

1 fresh lime, sliced into wedges
