Ingredients for 6 servings

1 medium onion, chopped

2 stalks celery, sliced

1 large carrot (or 2 small) diced

1 bell pepper (red or orange) diced

2 medium zucchini, diced

400 g canned diced tomatoes

1 can of red or romano beans

1 l. vegetable broth (or chicken)

1 tablespoon tomato paste

2 tablespoons olive oil

salt and pepper

fresh parsley

Preparation

1.

Put the oignion, the celery, the pepper and the carrot in a saucepan and sauté for 2-3 minutes in olive oil. Add broth and tomatoes and bring to the boil. Simmer for 15 minutes

Add beans and diced zucchini. Cook for another 5 minutes Add the tomato paste, salt and pepper

Ladle soup into bowls and garnish with fresh parsley
