Ingredients for 1 serving

2-3 handfulls of Kale

1/2 cup cooked Quinoa (I used tri-color)

1 tomato chopped

1/2 large cucumber chopped

1/2 cup plain hummus (Trader Joe's)

Olive Oil

Salt & Pepper to taste



In a serving bowl throw a few handfulls of Kale and massage it with a little bit of Olive Oil until kale has reached maximum pleasure. Add in 1/4 cup cooked Quinoa and mix around. Then add 1 chopped Tomato and 1 chopped Cucumber. Finally add your Hummus. I used Trader Joe’s hummus dressing, but you can use any sort of plain hummus for this. Add in as much hummus as you feel fit and mix around. You can kind of experiment with this, add more things, or less, I don’t really care what you do. But that was just an easy little something I came up with one afternoon and I though I would share it.
