6 green onions (white part only), bruised with the side of a knife and finely chopped

1 teaspoon minced garlic

3 tablespoons finely chopped lemongrass

2 teaspoons fish sauce

1/2 teaspoon salt, or to taste

2 tablespoons soy sauce

1 tablespoon brown sugar

1/2 teaspoon ground white pepper

2 tablespoons vegetable oil + oil for grilling

1 1/2 pounds very thin pork chops

Table Salad:

1/2 pound dried rice vermicelli or rice stick noodles

3 heads butter lettuce, leaves separated and washed

1 English cucumber, julienned

2 cups bean sprouts

1 cup each, Asian basil, rau ram (Vietnamese coriander), green perilla, red perilla and mint sprigs

Dipping Sauce:

3 1/2 tablespoons sugar

3/4 cup hot water

2 to 3 Thai bird chiles, or 1/2 jalapeno chile, finely chopped

1 1/2 tablespoons lime juice

5 tablespoons fish sauce

2 tablespoons finely shredded carrots for garnish (optional)
