1 small white or yellow onion, chopped

1 tablespoon brown sugar

1 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/2 teaspoon chipotle chili powder (replace with smoked paprika if you’re very sensitive to heat)

1 1-pound pork tenderloin, trimmed of fat and cut into 2″ pieces

1 1/2 cups chicken broth

1 cup plus 2 tablespoons orange juice, divided

1 teaspoon honey

Juice of 1 lime

1/2 teaspoon kosher salt, plus more to taste

Freshly ground black pepper to taste

1 cup shredded or shaved carrot

1 cup peeled, thinly sliced jicama

1/4 cup chopped cilantro

8 6″ corn tortillas, warmed

2 limes, each cut into quarters
