Ingredients for 4 servings

300 gms of cooked rice, long grain or basmati is fine

1 onion, roughly chopped

2 cloves of garlic, roughly chopped

2 red chillies, deseeded and chopped

Piece of ginger, approx. 7cm long, peeled and roughly chopped

(optional & not for vegetarians! - 1 tsp of shrimp paste)

2 tsps of dark soy sauce

Dash of brown sugar

Salt and pepper, to season

Small bunch of coriander, roughly chopped

Cucumber and tomato, for optional garnish

4 British Lion eggs

3 tbs of sunflower oil
