Ingredients for 8 servings

1 pound bacon

1/2 cup sour cream

1/2 cup mayonnaise

1 pint grape tomatoes

1 head iceberg lettuce

few cranks fresh pepper

24 mini phyllo or siljan shells

Preparation

1.

Place bacon, 4-6 strips at a time, between two layers of paper towels. Microwave on high for 4-6 minutes. Remove and repeat until all of the bacon is cooked

2.

Place sour cream and mayo in a bowl and combine. Cut grape tomatoes into four pieces each and add to sour cream mixture. Crumble cooled bacon and add to complete the BLT mixture. Stir in a few cranks of pepper. Spoon BLT mixture into crispy shells and serve
