1 1/4 cups gluten free oats (quick cooking or old fashioned)

1/2 tsp salt

1/2 tsp baking soda

1/2 cup sugar

1/2 cup packed brown sugar

3/4 cup unsalted butter, melted

1 tsp vanilla

Cooking spray

1/2 cup chopped walnuts (optional; could sub pecans)

1/4 cup sugar

1/4 cup packed brown sugar

1.5 tsp pumpkin pie spice

1/4 tsp salt

1 whole egg

1 egg yolk

1/2 tsp vanilla

1 1/4 cups canned pumpkin puree

1/3 cup evaporated milk
