1/4 cup sunflower oil

1 medium onion, chopped

5 cloves garlic, minced

2 teaspoons thyme

1 bay leaf

1/2 teaspoon salt

1/4 teaspoon pepper

4 cups cooked flageolets or navy beans

1 cup vegetable broth, store-bought or homemade

2 tablespoons chopped parsley

1/2 cup whole wheat panko bread crumbs

ROASTED LEMON-HERB TOFU:

2 packages (15 ounces each) extra-firm tofu

2 tablespoons lemon juice

1 tablespoon extra-virgin olive oil

1 clove garlic, finely minced

2 tablespoons loosely packed fresh basil leaves, chopped

2 teaspoons fresh oregano leaves, chopped

1 teaspoon fresh rosemary leaves, chopped

1 teaspoon coarse salt
