  • 2 cups assorted wild mushrooms
  • 1 small red pepper, minced
  • 2 cups polenta
  • 1 Tbsp chopped fresh rosemary leaves
  • 1 tsp chopped garlic
  • 1/2 cup peeled pearl onions
  • 1/8 tsp each kosher salt and freshly ground black pepper
  • 1 Tbsp olive oil
  • 3 cups chicken stock
  • 2 tsps olive oil
  • 2 Tbsps cold unsalted butter, cut into small pieces
  • 1 Tbsp butter
  • 2 cups half-and-half
