3 tablespoons firmly packed light brown sugar

2 tablespoons granulated sugar

3 tablespoons cold unsalted butter, diced

1/4 cup old-fashioned rolled oats

1/2 cup chopped pecans, toasted

Caramelized fruit:

2 large pears (see Note)

2 tablespoons unsalted butter

2 tablespoons sugar

1 teaspoon kosher salt

To assemble:

1 1/2 cups warm Brown Butter Caramel (see recipe link at right)

3 cups Bourbon Bombe (see recipe link at right)
