Ingredients for 4 servings

3 large dried black kikurage (wood ear mushrooms)

1 tablespoon akamiso (brown miso)

3 tablespoons finely sliced scallions

Cooked lobster meat from 1 (1-pound) lobster, in bite size pieces (shell and body reserved)

4 cups water

2 teaspoons soy sauce

1/2 cup katsuobushi (dried bonito flakes)

1/3 ounce konbu (kelp), about 2 or 3 squares

4 tablespoons saikyo (sweet white miso)
