Ingredients for 4 servings

2 x onions, finely sliced

2 tbsp butter or oil

1 lb mushrooms (any kind, although a woodsy variety like crimini is excellent, even if only using 1/2 the quantity), cleaned and sliced

2 cup Vegetable Stock , prepared or homemade (I soaked 1/3 cup dried porcini mushrooms in 2 cups very hot water for 1 hour. After straining, I added 1 large vegetable bouillon cube.)

1 cup Milk

1 x Lemon Juice

3 tsp Sweet Paprika

2 Sour cream (full fat or reduced fat) cup Sour cream (full fat or reduced fat)

salt an pepper (adjust carefully if using bouillon) salt an pepper (adjust carefully if using bouillon)

1 cup egg pasta,small- shaped or tarhonya

1 handful Parlsey chopped finely flat leaf
