I would bake the tortillas until crispy instead of frying. This could easily serve 5-6 people. I love serving with avocado or guacamole on the side!

Ingredients for 4 servings

4 x corn tortillas , cut into bite sized pieces

4 x oil for frying

1 tbs olive oil

1 x onion , diced

1 x red pepper , diced

1 x green pepper , diced

2 x jalapeno peppers , diced

4 x large tomatoes , diced

12 x large eggs , lightly beaten

12 x salt and pepper to taste

1/4 x cilantro , chopped

1 cup queso fresco , crumbled
