Ingredients for 6 servings

6 large veal shanks, 2 to 2 ½ inches thick, patted dry and tied with butcher’s twine

2 cup flour, seasoned with salt and pepper

7 tbsp olive oil, divided

4 tbsp sweet butter

1 1/2 cup dry white cooking wine

1 large Vidalia onion, finely chopped

1 1/2 cup carrot (2 to 3 large)

3/4 cup celery, finely chopped

3 x cloves garlic, minced

4 cup beef stock

28 oz. can diced plum tomatoes, drained

3/4 tsp dried basil

3/4 tsp dried thyme

1 x Bay leaf

zest of 2 lemons

zest of 1 orange

2 x cloves garlic, minced

1/2 cup flat-leaf parsley, minced

1/4 cup grated fresh horseradish

1/2 cup toasted pine nuts, optional
