Ingredients for 8 servings

1/4 cup olive oil (more or less to taste and diet)

12 large shallots , peeled

3 leaves fresh sage

1 sprig rosemary

1 sprig thyme

2 lbs unpeeled whole baby potatoes , washed or fingerling potatoes , are good too

1 unpeeled butternut squash , seeded and cut in 12 pieces (about 1-1/2 lb)

5 garlic cloves , sliced
