Ingredients for 4 servings

1 cup butternut squash, peeled and diced

2 tablespoons olive oil

1 pinch coarse salt

1 pound pasta (almost any will work; I used spaghetti)

8 ounces goat cheese

5 tablespoons butter

2 garlic cloves, minced or pressed

1/2 cup vermouth (or white wine)

1/4 cup fresh basil, chopped

1 tablespoon fresh thyme, finely chopped

1 cup caramelized onions

salt and pepper, to taste

toasted pecans, optional
