Ingredients

Chocolate kulfi:

1 vanilla bean

2 cups heavy cream

8 ounces semisweet chocolate, finely chopped

1/2 cup Ovaltine or Bournvita (see Note)

1/2 teaspoon kosher salt

Edible silver or gold for garnish, optional (see Note)

Brittle:

Pan spray or oil as needed

1/2 cup sugar

1/2 cup water

1/4 cup Nicoise olives, pitted and rinsed

1/4 teaspoon tandoori spice mix (see Note)

Corn starch, as needed for dusting
