Ingredients for 4 servings

1/2 lb ground chicken

2 large carrots

1 can water chestnuts

3 green onions

1 tbsp fresh ginger

2 tbsps chopped almonds

1 tbsp sesame oil

2 tsps tamari soy sauce

2 fresh lime juice

1/4 tsp garlic powder

pinch salt and pepper

Preparation

1.

Cook ground chicken with olive oil. Add garlic powder and salt and pepper to taste.

Combine carrots, water chestnut, green onion, ginger and almonds into food processor until finely chopped.

3.

In large mixing bowl combine sesame oil, tamari soy sauce and lime juice. Mix together. To mixing bowl add ground chicken and chopped veggies.

4.

Serve with leafy red or green lettuce. Top with siracha if desired.
