Ingredients for 1 serving

Handful walnuts

1 free-range chicken breast, cut into 3 long strips

8-10 whole black peppercorns

2 small lemons

1 stick celery, very finely sliced

Small bunch fresh tarragon leaves, roughly chopped

1/2 cup Greek style, runny natural yoghurt

2 tablespoons light mayonnaise

Salt and freshly ground black pepper

1-2 wholemeal wraps or 2-4 slices wholemeal/multigrain bread
