This recipe is delicious! I can only fit 3 peppers into my crock pot, so I had quite a bit of left-over turkey mixture. I just cooked it with a tiny bit of olive oil on the stove, and sprinkled the mixture on whole wheat tortilla chips and mozzarella cheese - delicious, healthier alternative to heavy nachos!

Ingredients

3/4 pound lean ground turkey

1/2 cup uncooked quinoa

1/4 cup chopped cilantro

3 scallions, chopped

1 small yellow onion, finely chopped

1 small jalapeno chile pepper, finely chopped

1 clove garlic, minced

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

4 large green bell or Cubanelle peppers

2 cups reduced-sodium chicken broth

1 can (28 ounces) tomato puree (choose one that has less than 50 mg sodium per 1/2 cup)

3/4 teaspoon dried oregano

2 tablespoons chopped fresh parsley

salt

freshly ground black pepper
