1 tablespoon vegetable oil

3 shallots, thinly sliced

1/2 teaspoon minced garlic

1/2 to 1 tablespoon coarse chile flakes

1/2 pound boneless, skinless chicken breast or thigh meat, coarsely


2 tablespoons Asian fish sauce

2 teaspoons palm sugar or light brown sugar

3 tablespoons water

2 1/2 tablespoons lime juice

1 tablespoon minced lemongrass

1/4 yellow onion, cut lengthwise into thin slices (about 1/4 cup)

3 tablespoons chopped cilantro

2/3 cup loosely packed mint leaves, halved

1/2 white cabbage, cut in 2 to 3 wedges, leaves separated
