Ingredients for 10 servings

1 3/4 cup Whole Wheat Flour

1/2 tsp Salt

3/4 cup Water

1 3/4 cup unbleached bread flour

1/4 tsp instant yeast

7 tbsp filtered or Spring water, at room temperature

1 large egg

4 x Egg Yolks

7 tbsp Whole Wheat Flour

2 1/4 tsp instant yeast

1 1/2 tbsp honey or agave nectar (1 ounce) OR 2 tablespoons or sugar or brown sugar (1 ounce)

2 tbsp Vegetable Oil

Extra Whole Wheat Flour for adjustments

1 x Egg beaten with 1 tablespoon water plus a pinch of salt for egg wash

Poppy Seeds or sesame seeds for topping (optional)
