50 g or 1 bundle of rice noodles (we used Sharwood's Thai stir-fry noodles)

finely grated zest and juice of ½ lemon

handful fresh basil

1 small red pepper , seeded and thinly sliced

2 cooked chicken breasts

1 heaped tbsp mayonnaise

100.0g sugar snap peas , halved lengthways

FOR THE DRESSING

3.0 tbsp olive oil
