Ingredients for 8 servings

1 cucumber , unpeeled, thinly sliced

1 (8 1/2 ounce) can artichoke hearts , drained

1 (15 ounce) can hearts of palm , drained and sliced (optional)

1 tablespoon parmesan cheese , grated (to taste)

3/4 cup salad oil

1/4 teaspoon dried dill

1 tablespoon Dijon mustard

2 slices bacon , cooked and crumbled, for garnish

1/4 teaspoon garlic powder (to taste)

For Salad

1/4 teaspoon pepper

1/2 cup diced celery

1/2 lb fresh mushrooms , sliced

1 cup mozzarella cheese , cubed into 1/2 inch pieces

1 green pepper , thinly sliced

1 small red onion , thinly sliced

1 tablespoon cider vinegar

butter lettuce leaf (or lettuce of your choice)

For marinade

1 teaspoon salt
