150 ml malt vinegar

1 large red chilli, de-seeded and julienned

175 g unrefined caster sugar

25 g Coleman’s English Mustard Powder

12 g turmeric

2 whole star anise

15 g corn flour

100 ml cold water

1 tsp salt

1 fresh bay leaf

180 g banana shallots peeled, 5mm thick sliced rings

180 g carrots, peeled 5mm thick sliced on an angle
