Ingredients for 3 servings

2 lbs boneless chicken breasts

1″ knob fresh ginger, grated

1/2 cup orange juice

1 garlic clove, minced

juice of 2 limes

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon allspice

1 teaspoon dried thyme

3 tablespoons dark brown sugar

1 teaspoon salt

1 teaspoon black pepper

1 scotch bonnet pepper, seeds removed and very finely chopped (or 2 if you’re brave)

1/4 cup mayonnaise

1 yellow bell pepper, finely chopped

1 celery rib, finely chopped

2-3 scallions, both white and green parts, chopped

juice of 1 lime (or less)

salt and pepper to taste
