Ingredients

a small pinch of salt

1 vanilla pod scored lengthways and seeds removed

310 g 11oz blackberries or other fruit see above

for the filling

125 g 4 oz butter

for the shortcrust pastry

100 ml 3 fl oz single cream

2 tablespoons cold milk or water

a small handful of fresh baby mint leaves

1 vanilla pod

100 g 3 oz icing sugar

2 large egg yolks preferably organic

500 g 1lb 2oz mascarpone

255 g 9oz plain flour

zest of a lemon

3 tablespoons sugar

3 tablespoons grappa or vin santo

optional

2 tablespoons blackberry or raspberry jam
