1 cup raisins

1 cup rum

1 stick (110 grams) melted butter, hot

Water, as needed

1 tablespoon plus 2 teaspoons (50 grams) Kirsch or simple syrup, optional

Hydrated Raisins

1/3 cup plus 1 tablespoon plus 1 teaspoon (100 grams) water

15 large (225 grams) eggs

2 tablespoons (50 grams) butter

3 cups plus 3 tablespoons (500 grams) blanched, whole, almonds

1 cup plus 3 tablespoons (250 grams) sugar
