150 g caster sugar

50 g golden sultanas

500 g ripe tomatoes, washed and roughly chopped

1 clove of garlic, crushed

2 cardamom pods

1 bay leaf

1/2 tsp whole coriander seeds

1 large onion, diced

1 tbs shredded ginger

1 tsp chopped thyme

3 tbs tomato puree

Salt and freshly cracked black pepper

1 tsp black onion seeds
