1 medium green bell pepper, diced

1 vine ripened tomato, seeded and diced

4 cups chicken stock

2 cups long-grain brown rice, rinsed

1 teaspoon dried oregano

1 teaspoon fresh thyme, minced

2 teaspoons salt

1 teaspoon fresh ground black pepper

3 bay leaves

2 tablespoons tomato paste

2-4 teaspoons hot sauce (optional)

1/2 cup chopped scallions

1/2 cup chopped fresh parsley
