1 can FOR THE CHIPOTLE_MAPLE BARBECUE SAUCE --- crushed tomatoes

1/2 cup Maple Syrup

1/2 cup packed light brown sugar

3 x chipotle peppers in adobo, diced

1 cup White Vinegar

1/4 cup Worcestershire Sauce

1/2 cup unfiltered apple juice

Juice of 2 lemons

4 x garlic cloves, minced

2 tbsp colmans dry mustard

2 tsp Salt

2 tsp Freshly ground black pepper

2 tbsp FOR THE SPICE RUB --- Paprika

1 tbsp Freshly ground black pepper

1 tbsp Kosher Salt

1 tbsp Garlic Powder

1 tbsp Chili Powder

1 tbsp packed brown sugar

1/4 tsp cayenne powder

4 pound FOR THE BRISKET --- Beef Brisket, at room temperature

1/4 cup spice rub

2 tbsp Balsamic Vinegar

1 cup Chipotle-Maple Barbecue sauce

1 cup Beer
