large handful mixed soft herbs including parsley and chives, finely chopped

50.0g butter

3 large scallops or 6 smaller scallops

drizzle olive oil

1 large shallot , chopped as finely as possible

1.0 tbsp lemon juice

500.0ml fresh fish stock

300 g piece skinned salmon fillet

chervil or parsley sprigs, to serve

150.0g fresh spaghetti

8 oysters
