1 bottle (750 ml) plus 1/4 cup dry white wine, such as pinot grigio

6 slices bacon, cut into 1/2-inch strips

2 tablespoons unsalted butter

1 onion, chopped

2 celery stalks, chopped

Kosher salt and freshly ground black pepper

4 sprigs fresh thyme

of red-pepper flakes

2 bay leaves

2 cups potatoes, peeled and cut into 1-inch cubes

2 cups heavy cream

1 cup whole milk

1 tablespoon extra-virgin olive oil

oyster crackers or crusty bread
