Ingredients

Toasted and cooked Basmati rice or

Cooked Quinoa

Butternut squash, cubed and steamed or roasted*

Purple potatoes, cubed and steamed or roasted*

Black garbanzo beans, soaked and cooked**

1 can coconut milk

1 cup pure water

1/2 yellow onion, small dice

3-4 cloves garlic, minced

2 tbsp fresh lemon juice

1/2 packed cup fresh, chopped cilantro leaves

1 1/2 tsp minced ginger

2 tsp tumeric

1 tsp coriander

1 tsp cumin

1/4 tsp cayenne

1/4 tsp paprika

1/2 tsp cardamom

1/4 tsp cinnamon

1 tsp fine ground sea salt

1 tbsp + 1 tsp cold-pressed, virgin coconut oil
