1 cup chicken stock or canned broth

1 tablespoon brandy

3 ripe tomatoes, chopped with skins

2 shallots, thinly sliced

4 eggs

1/2 cup (2 ounces) freshly grated Parmesan cheese

1/4 teaspoon salt

1/2 cup heavy cream

3/4 teaspoon salt
